The region’s high elevation, fertile soil, and soft morning fog slow the growth of tender leaves, allowing them to develop a vivid emerald colour, concentrated nutrients, and a naturally sweet, umami-rich flavour. Limited sunlight during shading boosts chlorophyll levels, deepening both colour and complexity.
